Our Caviar
Most caviar is comprised of the eggs from a number of varieties of sturgeon fish; one of the few species of surviving bony fish, which for the most part retain their prehistoric appearance. At PPI, it is paramount that our caviar is derived from sustainable sources. We exclusively feature sturgeon caviar from aqua farms that we have both personally visited and inspected. As purveyors of this fantastic product, we take our role seriously because we too love caviar and want to ensure that its farmed future is a bright one. Domestically, we source high quality caviar such as white sturgeon, Siberian sturgeon, other roe varieties like Salmon, Trout, Paddlefish and more!

Our eco-friendly packaging not only reduces environmental waste as compared with conventional Styrofoam containers, but it also keeps your product in its prime condition for a longer period of time (30-38 hours of transit).
Caviar Authenticity
Since 1998, the caviar trade has been governed under "CITES" (Convention of International Trade in Endangered Species). Pacific Plaza Imports is doing its part in an effort to conserve the rapidly depleting supply of the ancient wild sturgeon, and preserve authenticity while supporting modern sustainable farming methods. Pacific Plaza Imports sells only caviar that has been officially produced by authorized producers under the international CITES laws and regulations, as well as the US Fish and Wildlife regulatory commission. Not to mention we only provide genuine caviars from the best sturgeon farmers. Some companies bring in product seeking only the best value for their profit. Our recent trips to more cost effective farms in China served to validate our belief that food is about passion and integrity. Though it may cost more to source from European farms, we share in the value and superior quality of the product, and will not compromise excellence for value. Finally, we focus on using as much domestic product as possible; you shouldn't be surprised to know that some of the best caviar is produced right here in the USA.
The Process – From Catch to Your Table
Immediately after they are landed, the catch of sturgeon is measured. Each fish is weighed individually and registered — this number makes each can of caviar permanently identifiable. After washing the fish several times, the caviar is removed and transferred to a special vessel, weighed, and brought to the laboratory for final processing. There, the roe is strained through a coarse-mesh sieve. Then, the roe is sampled, appraised, and finally sorted for the various preparation modes and grade selections.
The last operation prior to packaging is to salt the roe for preservation purposes. This is one of the most delicate phases in caviar production—if an insufficient amount of salt is added, the caviar will quickly perish; if too much is added, it dries up and becomes sticky. The term "Malossol" means "little salt" (it does not designate a specific variety). All caviar brands with only small amounts of salt added as a preservative bear this designation.
It is not an exaggeration to call roe grading an art. Factors that must be considered for grading the roe of all sturgeon species include: uniformity and consistency of the grain, size, color, fragrance, flavor, luster, firmness, and vulnerability of the roe skin. The caviar masters carefully appraise the caviar, selecting only choice qualities for export markets.
